Store-bought taco seasoning contains both onion and garlic, making it high FODMAP. However, making your own taco seasoning at home is incredibly easy!

Ingredients

For approx. 400 g minced meat/other filling:

  • 1 tbsp garlic oil (for cooking), store-bought or olive oil + 1 garlic clove
  • 1 tbsp cumin
  • 2 tsp paprika
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp chili powder or half a fresh chili (or more, depending on how spicy you like it. Note that spicy food can trigger symptoms for some, so omit or reduce if you are sensitive)
  • 1 handful green part of spring onion (scallion), finely chopped OR 1 tsp onion substitute (such as FreeFOD onion replacer)
  • A pinch of turmeric
  • 1 tbsp cornstarch / Maizena (optional)

Instructions

Mix all the seasoning ingredients together, excluding the spring onions, garlic, oil, and cornstarch. Feel free to make a larger batch and store it in a jar for next time.

When you are ready to cook:

Make garlic-infused oil: Sauté a few pieces of garlic in some oil until it smells wonderfully fragrant. Remember to remove all the pieces of garlic before adding anything else! (This step is optional, but adds a lot of great flavor).

Next, add 400 g of minced meat, or a vegetarian alternative such as firm tofu, beans, lentils, or oyster mushrooms (or a combination).

Add the spice mix, spring onions, and 1/2–1 dl of water. If you prefer a slightly thicker consistency, you can also add 1 tbsp of cornstarch. Season with extra spices to taste, if desired.
