This tuna salad is delicious as a sandwich spread, or on crackers as a small snack.
Prep time: 10 minutes
Ingredients
- 2 cans tuna in water or oil, preferably in pieces (approx. 240g drained)
- 1-2 tsp garlic-infused oil
- 0.5 tsp salt
- 0.5 tsp pepper
- 1.5 tsp mustard (preferably Dijon)
- 1-2 tbsp lemon juice
- 1.5 tbsp mayonnaise
- 1 tbsp sour cream
- 3 spring onions (green parts only)
- 1 tbsp cornichons (small pickled cucumbers)
- Optional: cucumber, jalapeños, corn kernels, chili powder, fresh chili, chives, capers
Instructions
1. Drain the tuna.
2. If using tuna in water, mix in some garlic-infused oil. If using tuna in oil, skip this step.
3. Finely chop spring onions, cornichons, and any optional ingredients.
4. Combine all ingredients in a bowl.
5. Season to taste with lemon juice, salt and pepper.
Keeps for several days in an airtight container in the refrigerator. This will taste even better after a day, so i recommend making som extra for leftovers!
