Fudgy Chocolate Chip Brownie

These delicious fudgy brownie bites are a easy and relatively quick dessert that is almost always a hit among guests! Everything gets thrown into a single bowl and stirred before baking - it couldn't be simpler. I prefer these extra fudgy and served cold, but if you're serving them fresh, I recommend cooking them a little longer and letting them cool briefly when they come out of the oven to avoid a messy serving.

Ingredients

  • 130g low FODMAP flour
  • 250g sugar (I use a mix of brown and white sugar)
  • 1-2 tsp vanilla sugar
  • 1 tsp baking powder
  • 150g melted butter/margarine/neutral oil
  • 2 eggs
  • 3 tbsp cocoa powder
  • 100g chopped dark chocolate
  • A pinch of sea salt

Instructions

1. Preheat the oven to 180°C (356°F) with top and bottom heating on.

2. Melt the butter and set aside to cool slightly.

3. Mix all dry ingredients in a bowl. Add the eggs and melted butter, then mix well until everything is fully incorporated. The batter will be quite thick, so you might want to use a stand mixer to save yourself some effort. Finally, stir in the chopped chocolate bites.

4. Press the batter into a 20x30cm baking tray. If your tray is smaller, the brownies will need a bit more baking time.

5. Bake in the middle of the oven for 25-35 minutes (depending on your oven and the size of your tray). The brownies should be crispy around the edges and soft in the middle.

6. Allow to cool slightly on your kitchen counter before serving, or refrigerate and serve cold. Decorate with a dusting of icing sugar and fresh berries if desired. You can also serve with low FODMAP vanilla ice cream, whipped lactose-free cream, or a berry coulis.
