No bake chocolate peanut butter oatmeal cookies

These cookies are super delicious and easy to make – no oven needed! The recipe is inspired by the blog What Molly Made and their no-bake chocolate oatmeal cookies.

🌱 Tip: Use vegan margarine and plant-based milk for a vegan and dairy-free option. For gluten-free cookies, use gluten-free oats.

Ingredients:

  • 60 g butter or firm margarine
  • 1 dl sugar
  • 2 tbsp maple syrup
  • 2 tbsp cocoa powder
  • 4 tbsp milk
  • 60 g peanut butter
  • A little vanilla extract or vanilla sugar
  • 3.5 dl rolled oats
  • 2 pinches of salt

Instructions:

1. Melt the butter/margarine in a saucepan.

2. Add the sugar, maple syrup, milk, and cocoa powder, and bring to a boil for about 1 minute, or until the sugar has dissolved.

3. Remove the pan from heat and stir in the peanut butter and vanilla.

4. Mix in the oats with a spatula until everything is well combined.

5. Put 1-2 teaspoons (depending on the size you want) onto a baking sheet lined with parchment paper or into muffin cups.

6. Refrigerate or freeze until set, about 30 minutes.

These cookies can be stored in the refrigerator for up to 2 weeks, or in the freezer for up to 3 months. Can be eaten directly from the freezer!
