Berry coulis is a fresh, delicious sauce that pairs brilliantly with so many desserts. Its bright acidity is especially lovely over cheesecake, vanilla ice cream, panna cotta, and pancakes. You can use whatever berries you happen to have – whether freshly picked, bought in season, or grabbed from a bag in the freezer. Even frozen berries turn out beautifully when warmed through with a little sugar. The sauce keeps for up to a week in an airtight container in the fridge, and it freezes really well too.
Servings: 1 medium cake or 4-6 dessert portions
1. Gently warm the berries and a little of the sugar in a saucepan until the fruit is completely soft and the sugar has dissolved. Taste and add more sugar until it reaches your preferred sweetness.
2. Blend the berries using a stick blender or food processor until smooth. Alternatively, mash them thoroughly with a fork.
3. Serve as is, or pass it through a fine sieve for an extra silky texture. Use a spoon to press as much fruit through as possible, leaving only the seeds and skin behind. Be sure to scrape the underside of the sieve to catch every last drop.
4. Add a quick squeeze of lemon juice to balance the flavours with a bit of fresh acidity.
5. Keep chilled until ready to serve – it stays fresh in the fridge for a few days and freezes well.
