This tuna salad is delicious as a sandwich spread, or on crackers as a small snack.

Prep time: 10 minutes

Ingredients

  • 2 cans tuna in water or oil, preferably in pieces (approx. 240g drained)
  • 1-2 tsp garlic-infused oil
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 1.5 tsp mustard (preferably Dijon)
  • 1-2 tbsp lemon juice
  • 1.5 tbsp mayonnaise
  • 1 tbsp sour cream
  • 3 spring onions (green parts only)
  • 1 tbsp cornichons (small pickled cucumbers)
  • Optional: cucumber, jalapeños, corn kernels, chili powder, fresh chili, chives, capers

Instructions

1. Drain the tuna.

2. If using tuna in water, mix in some garlic-infused oil. If using tuna in oil, skip this step.

3. Finely chop spring onions, cornichons, and any optional ingredients.

4. Combine all ingredients in a bowl.

5. Season to taste with lemon juice, salt and pepper.

Keeps for several days in an airtight container in the refrigerator. This will taste even better after a day, so i recommend making som extra for leftovers!
