Energy balls are a delicious snack or pick-me-me up when you need a little boost. These are packed with fibre and are perfect for lunchboxes or bringing along on a hike.

Serves: 4

Ingredients

  • 50 g dates, approx. 3-5 pcs*
  • 30 g grated carrot
  • 1 tbsp oil (e.g., coconut oil), butter, or margarine
  • 1 tbsp maple syrup
  • 1 tsp vanilla sugar (optional)
  • A pinch of salt
  • 40 g nuts/ approx. 100 ml, such as pecans, walnuts, macadamias, or peanuts
  • 40 g rolled oats/approx. 100 ml – use gluten-free oats if needed
  • Desiccated coconut for coating

Instructions

Remove the pits from the dates. Place all ingredients except the coconut in a food processor and pulse until you have a paste (does not have to be perfectly even).

Roll the mixture into balls with your hands and coat them in coconut. They can be served immediately or chilled first. Store them in an airtight container in the fridge or freezer – they thaw quickly and are perfect for grabbing straight from the freezer for your lunchbox!

*A note on dates
Monash University tests show that unspecified dried dates (pitted) are low FODMAP at 30 g, while FODMAP Friendly tests suggest up to 43 g is safe. Note that dates can vary in size and weight. Medjool dates are low FODMAP at 20 g according to Monash, but FODMAP Friendly lists them as safe up to 75 g. Always test your own tolerance after the elimination phase!
