Ingredients

  • 300–400g strawberries or raspberries, fresh or frozen (strawberries are low FODMAP at 65g, raspberries at 58g)
  • 2 tbsp chia seeds
  • Optional: sugar and lemon juice

Method

Place the berries in a saucepan and bring to a gentle simmer. If any foam rises to the top, skim it off with a spoon.

Use a spoon or spatula to mash the berries as thoroughly as possible. If the strawberries are quite chunky, you can use a stick blender. Season with sugar and lemon juice to taste if desired.

Turn off the heat and stir in the chia seeds. Transfer to a clean glass jar with a tight-fitting lid. Keeps for a few days in the fridge.
