Apples are classified as high FODMAP because a "normal portion" exceeds the threshold for what is considered low FODMAP. Pink apples have been found to be low FODMAP at just 20g (23g without the peel), while green Granny Smith apples have been tested as low FODMAP at 26g. However, this still means you can enjoy at least 20g of apples! In this cake, we use 200g of apples (about 3 apples, depending on size), so you can eat at least 1/10 of the cake per serving (depending on the type of apples you use) and still stay within the low FODMAP limit.

You will need:

  • 150g butter (doesn’t need to be lactose-free unless you're lactose intolerant)
  • 250g sugar
  • 3 eggs
  • 1 tsp baking powder
  • 200g low FODMAP flour blend
  • 200g apples
  • 2 tsp cinnamon
  • 4-5 tsp sugar (for the apple topping)

Instructions:

1. Mix the butter and sugar together until the mixture becomes light and fluffy.

2. Add the eggs, baking powder, and flour, and mix until smooth.

3. Peel and slice the apples into wedges, then toss them with the sugar and cinnamon.

4. Pour the batter into a 24cm (9-inch) round cake pan, and arrange the apple slices on top.

5. Bake at 180°C (350°F) for about 40 minutes, or until a skewer (or fork) inserted into the center comes out clean and without raw batter.

Serve with low FODMAP ice cream or lactose-free whipped cream for an extra treat!
