This pizza recipe is quick and easy to make, perfect for both a cozy weekend meal and a speedy weekday dinner! Top it with your favorite ingredients and serve with a fresh green salad on the side.
Note: Testing of different types of spelt flour shows that FODMAP levels can vary. However, amounts up to 100 g have been tested as low FODMAP. Many people also find that they tolerate spelt flour well, which is why we continue to include recipes with spelt flour in the app.
We still cannot guarantee the FODMAP content of spelt flour, and therefore recommend that you consider portion sizes. We assume that at least 20 g of flour is safe for most people. If you use products containing spelt flour during the strict phase and experience persistent symptoms, it may be wise to reduce your intake and see if this helps.

Ingredients for the dough (3 small pizzas):
- 250 grams of spelt flour
- 1 teaspoon of dry yeast
- 1 teaspoon of salt
- 150 ml of warm water
- 1 tablespoon of olive oil
Pizza topping:
Choose whatever you like! Here are some tasty options (but you don't need to use everything at once):
- 200 ml pizza sauce: You can use chopped tomatoes, passata, or lactose-free crème fraîche mixed with various spices
- 200 grams of grated cheese (such as mozzarella, parmesan, hard white cheese)
- Red bell pepper, cut into strips
- Deli meat, pepperoni, or chorizo
- Fried mushrooms (use canned mushrooms, and rinse well before use, as FODMAPs are in the liquid)
- Ham slices
- Thin slices of sweet potato; place on top of the pizza to cook through
- Fresh basil leaves
- Fresh rocket lettuce (add after cooking)
Instructions:
- Make the dough: Mix the spelt flour, dry yeast, and salt in a large bowl. Add warm water and olive oil, and knead the dough well. Cover the bowl with a kitchen towel and let the dough rise for about 30 minutes.
- Prepare the oven: Preheat the oven to 220 degrees. If you have a pizza stone, place it in the oven to heat up.
- Roll out the dough: After the dough has risen, roll it out on a floured surface to the desired thickness. Transfer the dough to a baking paper-lined baking tray.
- Add toppings: Evenly spread the pizza sauce over the dough. Sprinkle grated cheese over the sauce. Then add bell pepper, mushrooms, and optionally pepperoni. Season with salt and pepper.
- Bake the pizza: Bake the pizza in the preheated oven for about 15-20 minutes, or until the cheese is golden and the dough is cooked through. If using a pizza stone, the baking time will be much shorter.
- Add fresh herbs: Remove the pizza from the oven and garnish with fresh basil leaves before serving, if desired.
Serve the pizza hot, preferably with a fresh salad on the side.
